Crock Pot Chicken Tortilla Soup

This recipe comes together quick as a dump and go kind of meal. You simply dump all the ingredients in the crock pot in the morning then set it and forget it until it's time to eat!

Spice it up with a hot salsa or keep it mild for the kiddos. Add variety with different kinds of toppings that each person in your house hold would enjoy. Can easily be doubled to serve a crowd!



Ingredients:

1- 14oz can of diced tomatoes with herbs

1- white onion (finely chopped)

1-can of mixed medley beans

1-can of corn

1-jar of salsa

4 cups of chicken broth

1 cup of water

3-4 boneless chicken breasts (can be frozen)

1 tsp chili powder (more if you want it spicy)

1 tsp garlic powder

1/2 tsp cumin

Salt and Pepper to taste


  1. Throw everything in the crock pot and let cook on high for 6 hrs or until chicken is fully cooked.

  2. Shred chicken with two forks before serving.

  3. Serve with various toppings. Our favourites are guacamole or diced avocado, tortilla chips for crunch, plain greek yogurt or sour cream, and shredded cheese.

  4. Enjoy!
